Winter squash can take up a lot of space in the garden, but it can also make a substantial contribution to your fall harvest!  Allow at least two feet of space in all directions and expect significant vine spreading (with the exception of Tivoli Spaghetti and Bush Delicata varieties, which can be quite compact).  Give them lots of compost, sun and even watering throughout the season and you’ll be rewarded with a beautiful and delicious bounty.

ACORN (Table King Organic)

  • Roughly 1.5lb fruits
  • Good storage variety
  • Flavour improves in storage
  • Fibreless, sweet flesh

GOOD FOR: Stuffing, roasting


  • Rich, dry flesh
  • Stores up to 6 months
  • 4-5 fruits per plant, up to 10lbs

GOOD FOR: Everything! Soups, puree, roasting, etc


  • Mild, delicate flavour comparable to sweet potato
  • Thin, edible skin
  • Small, 2lb fruits store well

GOOD FOR: Cutting into crescents and roasting, stuffing, BBQing


  • Medium, onion shaped fruits
  • Average 3lbs each
  • Full of flavour
  • Smooth and never stringy
  • Early Producer

GOOD FOR: Curry, pies, soups, puree, roasting


  • High yielding, 6lb fruits
  • Short vines, compact plant
  • Early producer

GOOD FOR: Baking, spaghetti replacement, sautéing

SUGAR PIE (Small Sugar)

  • Fine, sweet flavour for pies
  • Heirloom classic
  • Stringless flesh
